Olive harvest is done exclusively manually at the most ideal time. Immediately after harvest The same day is processed by a cold press and is then kept under strictly controlled conditions. Harvest is organized by olive variety and we get our extra virgin varieties of olive oil, but we also do some sort of varieties with expert consultants.
